Abstract

Nasi Punel merupakan kuliner tradisional khas Pasuruan, khususnya Bangil, yang tidak hanya hadir sebagai makanan sehari-hari, tetapi juga sebagai penanda identitas budaya masyarakat lokal. Penelitian ini bertujuan untuk mengetahui bagaimana Nasi Punel membentuk, merepresentasikan, dan mempertahankan identitas kuliner tradisional masyarakat Pasuruan di tengah perubahan sosial, modernisasi konsumsi, serta ancaman homogenisasi budaya. Penelitian menggunakan pendekatan kualitatif deskriptif dengan teknik pengumpulan data melalui observasi, wawancara semi-terstruktur, dokumentasi, dan studi literatur. Observasi dilakukan di beberapa warung Nasi Punel di Bangil, Kabupaten Pasuruan, dengan informan yang terdiri atas penjual, pembeli, tokoh masyarakat, pelaku wisata, dan generasi muda. Hasil penelitian menunjukkan bahwa identitas Nasi Punel dibangun melalui tiga aspek utama, yaitu kekhasan material berupa tekstur nasi dan komposisi lauk, praktik sosial berupa kebiasaan makan bersama serta pewarisan pengetahuan kuliner, dan representasi simbolik sebagai ikon Bangil-Pasuruan. Kesimpulannya, Nasi Punel menjadi bentuk warisan budaya takbenda yang hidup karena terus diproduksi, dikonsumsi, dimaknai, dan dinegosiasikan oleh masyarakat.
